I made sausage balls for a Derby Party a while ago, and ended up with a whole bunch of leftover Bisquick, so I've been figure out fun things to make with it. Tonight I wanted something sweet, so I looked on the Betty Crocker website and found Praline Meltaway Biscuits - http://...bettycrocker.com/...s/Recipe.aspx?recipeId=36145 I got rid of the pecans (because I don't like them) and added some chopped apples instead, and added a bunch of cinnamon to the biscuit dough, plus more chopped apples. They're delicious, and super easy! 1/3 cup butter or margarine, melted 1/3 cup packed brown sugar 1/3 cup chopped pecans 2 1/4 cups Original Bisquick® mix 2/3 cup milk or Cream 2 tablespoons granulated sugar 1. Heat oven to 425°F. Spray bottoms and sides of 12 regular-size muffin cups with cooking spray. Stir together butter, brown sugar and pecans in small bowl. Divide sugar mixture evenly among muffin cups. 2. Stir Bisquick mix, milk and granulated sugar in medium bowl until soft dough forms. Place a spoonful of dough in each muffin cup. 3. Bake 11 to 13 minutes or until golden brown. Turn pan upside down onto cookie sheet. Leave pan over biscuits a few minutes to allow brown sugar mixture to drizzle over biscuits. PS: i mixed it all together, jest right, huh? and sweet moonlight magnolia fritters, dang if it didn't darn shucks looksy jest like dissums!!!

Technically it was a little while ago, but I tried to run a special tonight at the bar, drunken salsa chicken. Chicken breast, bit of cheddar melted on top, a little salsa borracho over that, yellow rice w/ beans and fried plantains as sides. It was moderately amazing, and I saved most of it to bring home. Gonna try and run it this weekend when there are actually people to buy it. PS: Salsa borracho, for the record, being basically just a simple salsa you cook and render down a bit in beer, hence the name "drunken salsa." I didn't have much to work with, just some green peps, tomato, and sliced japs added to some onions and a couple cloves' worth of garlic I sweated out ahead of time. Cut it with some cumin and a dash of "taco seasoning" to give it some body. Worked all right. I just made burgers tonight, mostly because I spent the entire day at work making marinades and slicing onions and peppers.
