sorry for the delay... As it turns out, I cannot FIND my biscuit recipes! I'm so annoyed. I had an awesome & easy milk biscuit recipe, and another one which you could sub yogurt, kefir, or buttermilk... loved them both but ;_;

So here is a buttermilk biscuit recipe I tried last week, it turned out great. Just make sure you don't overcook or over mix, or they'll be less tender & flaky.

You can make your own buttermilk by souring your milk w/ lemon juice or vinegar. I always use salted butter, so I adjust the recipe to use less salt than called for originally. If you have unsalted butter, add more salt.

3 cups flour
3 tsp Sugar
3 tsp Baking Powder
1/2 tsp Salt (more if you use unsalted butter)
1/2 tsp Baking Soda
1/2 Butter, cold, cut into 1/2 inch chunks
1 1/2 cup Buttermilk
9 Tbl melted butter (I added a little more)
3 Eggs, slightly beaten

Sift dry ingredients together.
Blend/cut in butter w/ a pastry blender, until the mix resembles coarse meal.
Add buttermilk & stir with fork just until mixed.
Knead like 6 times.

Pat out onto floured area, 1/2 inch thick, & cut into biscuit shapes as desired (I just cut into squares). Brush tops with milk or cream.
Bake at 425 for 12-15 minutes

Watch your baking time.. mine were done in 10 min, but my oven is fucked up.
PS: OH SHIT what is that I fucked up the ingredient list - OMIT the
9 Tbl melted butter (I added a little more)
