Mike, I know you're a hot sauce fan and have an extensive collection.

How do you feel about regular old supermarket hot sauces? Do you still enjoy them, or are you DEEP INTO THE HOT SAUCE RABBIT HOLE and it's hard to enjoy the mundane everyday supermarket hot sauces?

I actually like them! Certain sauces have certain applications. To me, if I'm just making plain ol buffalo wings, it's frank's red hot or gtfo. Franks kinda reminds me of celery, and it's kinda salty, goes well on vanilla ice cream (don't knock it till you try it!) One of my favorite sauces is actually Cholula, and I have seen myself using it more and more.

It's not always about heat, although my go-to sauce lately is Blair's Pure Death (I think you used it on the white castle when you came up here), which has a nice balance imo. I will find that sauces like Tabasco, Texas Pete, etc are not even close to being hot, or just too vinegar-y and find myself just moving up to the other sauces I have.

Love some Cholula, the regular is good but I think I might like the Chili Garlic even more. Tapatio is pretty good as well since I'm also not a big fan of vinegar based sauces.

I love tapatio. One of the major reasons is because he looks SO DAMN EXCITED on the bottle to make my food spicy.

It's like he's looking at me with that big grin and stupid hat saying "You like spicy? I make spicy just for you!"

I'm going to start eating Tapatio just because of this.

Hopefully I can poke RealityCzech into adding his considerable experience to this conversation, but here's my meager two cents:

Sriracha. It is amazing and goes well on anything. Dan likes it enough that he keeps a bottle at work, and I have learned to keep a 'car Sriracha' for when he runs out at work and gets grumpy. It also makes him a lot happier on road trips. I can't tell you how many people go for a ride in my car and go 'Uhh... you have a bottle of hot sauce in here?' but it makes my life easier.

Dan also has a large selection of Blair's stuff, through some super special one that is in its own plexiglass display case with a wax seal on it.

There is one entire shelf on the door of my fridge devoted to this man's hot sauces. Whenever we go to a new city and he comes across a hot sauce that sounds interesting, he buys it to bring home.

One of my favorite ones I actually got in Julian, CA - it's a homemade margarita/key lime hot sauce, and is amazing. I also eat a lot of fish while Dan is out of town (okay, entendre not intended but hilarious) and this hot sauce is made for it.

Phae, I have one of the reserves sitting in my room. Beautiful bottle. Never going to get opened. The color of blood, and rightfully so. Treat it well!

Wait... margarita hot sauce? OMFG. I want it on ALL of my fish!

I just wanted to pop in here and say garlic cholula is my go-to.

My uncle has hot sauce called "Ass Raper." I refuse to try it.

So I can understand the h8 for vinegar-based hot sauces, but don't discount 'em entirely.

My old man once put Green Tobasco into some chunky guacamole he was putting together on a whim.

We don't remember what other things he experimented with that time, but it was straight up the best guac I've ever had in my life, and Green Tobasco was liberally applied.

I think the Green Tabasco is the worst sauce ever. I'm not saying I hate vinegar based sauces, but oh my god this sauce tasted like butts. I have a jalapeno sauce from Blair's, and it just tastes so much better.
