2 lbs fingerling potatoes, cut into 3/4 inch chunks
2 avocados
2 tablespoons lime juice, from a lime or two
4 hardboiled eggs coarsely chopped
1/2 tsp salt (at least, I am not sure how much)
1/4 teaspoon ground cayenne pepper
1 plum tomato, chopped
1 small red onion, diced small
1 smallish cucumber, diced very small

boil potatoes, chop into potato salad pieces
put avocado, lime juice, salt into blender and puree
add tomato and onion, blend again but don't puree, you should still see chunks of the veggies
mix together potatoes, eggs, cucumber
mix in avocado puree and cayenne
salt and pepper to taste

possibly add bacon, sounds good to me but I haven't tried it! I made this salad this morning and it was awesome.

This sounds so fucking delicious and I want to make it ASAP right the fuck now, but why is this in Pee Chat when it should be gracing the page of Fatty Talk? (Also my stomach.)
