Dommi, this might be a little monotonous for you, but I always enjoyed an old classic: eggs fried in bacon grease. I tend to eat eggs four or five at a time, though, so it doesn't have all that long to get boring in my case.

Assuming you're OK with the texture, hard cooking is also easy and makes for a good convenience food.

Lastly (and maybe the first real answer I can give you), I like this recipe for fried(-style) chicken: http://www.everydaymaven.com/2013/paleo-oven-fried-chicken/
It should fit the diet you described. The eggs, of course, are the dredge for the chicken to hold the "breading" (actually almond flour) in place.
PS: I should say that that "breading" recipe is good for all kinds of low-carb, paleo, or whatever stuff. I used it on pork chops recently to similar effect. The ultimate test will be whether or not it can make an acceptable imitation of chicken-fried steak.

Thank you! These are all really helpful, though I'd likely do tofu instead of chicken with the oven frying because I'm also trying to minimize my meat intake. (I can't ever do anything easy hahahaha.)
