After you do five of those quests in each city you get a special quest that, when you complete it, upgrades the Guild with a new merchant (alchemy, weapons, armor, and geberal goods) and the fences carry 1000 more gold. There are 4 in all, so by the time you do them all the fences will carry 4k gold. I'm doing a Pure Mage run since that's just my style. I'm already the Arch Mage of the College of Winterhold and I've restored Thieves Guild with all four merchants.
I found a really handy mod that let's me spend Dragon Souls on perk points and stat boosts. It's really good since after you get all the shouts Dragon Souls become more or less useless, so this lets me put them to good use. Currently working on my Enchanting skill, which is level 85. I'm making bank selling all these enchanted weapons ...
